How to cook Chicken Pho (Phở Gà)

Pho aromatic flavor of the chicken and onions, broth, sweet and a little chicken grease. Chicken is soft, not dry, and noodles is tough. Let’s cook this delicious dish with us now with the recipe below.

1. Ingredients:

  • – Big strand vermicelli (Banh Pho): 1.5kg
  • – Pig bone (choose good thigh bone): 1kg
  • – Hen: 1 (1.5kg)
  • – Dried shrimp: 50g
  • – Ginger: 50g
  • – Scallion: 100g
  • – Lemon, reb pepper, scallion, chili sauce, fish sauce, salt, sugar, glutamate, laska leaves, basil

Chicken Pho-(Pho Ga)

2. Instructions:

Pig bone has cleaned, drained, smashed and stewed with 4 liters of water. Skim regularly to make the bouillon pure.

Chicken has washed then bring to boil with 2 liters of water. Use a stick to jab the chicken, if delicious the rosy water does not run out. Take it out, let it drain and cold, dissect and add the chicken bone to the pot to stew again.

Fry the shrim in the pan quickly. 

Ginger and scallion are grilled on charcoal, peel then smash them. Herbs are cleaned and let’s drain. Peel the onion, slice into round and thin slices.

To stew the bone around 2 hours, drop in ginger and scallion (keep them in a clouth), dried shrimps, 1 teaspoon of salt to cook together. After 1 hour, filter the broth to the pot of glutamate, cut about 10 white parts of the shallot, smash them, drop in the bouillon. Keep the medium fire to make the pot simmer, taste to your taste. Keep the pot on the oven.

 Take the Banh Pho in the net ladle, dip the net ladle in boiling water, shake to remove any axcess water, pour Banh Pho in a bowl, place the chicken meat and slices of big onion atop, scoop the bouillon to shink the Banh Pho, sprinkle pepper and serve hot.

On the table, we place a dish of fresh herbs, a small dish with sliced pepper and lemon, 1 cup of fish sauce, 1 cup of chili sauce. When serving, add in a dash of chopped onion, coriander, pepper… Good Chicken Pho (Phở Gà) shoule be: the bouillon is pure and sweet, has chicken flavor, the meat is just cooked, not so tender nor elastic.
