Braised fishin general is easy to learn but hard to make delicious if not patience; cooking takes time and put the spirit of care for food for the family if you want to express through the braised fish.
1. Ingredients:
+ Fish: You could choose any type of fish that you like (carp, catfish,…).
+ Pork side: 100 gram (you need some pieces only, it shall make braised fish more delicious).
+ Galingale: a branch by three fingers huddled together.
+ Dried onion.
+ Pepper: 02.
+ Fish sauce, salt, color water, chilli, soya-sauce
+ Thin-top mushroom.
2. Instructions:
The steps for preparation this dish is so simple, but it take much time for cooking. Actually, it’s about 30-45 minutes for cooking, it also depend on type of fish you shall braise.
+ Firstly, to cut up pork side in to suitable pieces and put them in pot; cut fish in to pieces, then marinate them with ingredients as follows:
1 tablespoon of sauce
1 teaspoon of salt
1 teaspoon of sugar
A little of chilli
Cut up 2 pepper into small pieces, put them into fish pot to get rid of fishy odor.
1 tablespoon of soya-sauce
3-4 tablespoons of color water
Time for marinating is about 15-20 minutes.
+ Galingale: wash, put them into mortar and grind, then add grinded galingale into fish pot.
+ Dried onion: chop and marinate with fish.
+ To soak thin-top mushroom into warm water for 15-20 minutes, pick them out and wash, drain, cut into small pieces.
+ Place fish pot on stove with high heat until boil, reduce the heat to medium for 5 minutes in order to fish absorb spices.
+ Pour warm water into fish pot , add thin-top mushroom, then bring to a boil, add spice, cooking oil to taste and braise with small heat for 30-45 minutes until dry.
So, you already have a traditional braised fish pot, let’s enjoy it with hot rice, it’s so delicious!
