How to cook Deep-Fried Butterfly Shrimps

1. Ingredients:

  • – Medium-sized shrimps (shelled, retaining tails, devein): 1 kg
  • – Oil for deep frying: 1/2 cup
  • – Salt, dried-fried till color changes: 2 tablespoons
  • – Five-spice powder: 1 tablespoon
  • – Spring onions, shredded: 2 stalks
  • – Ginger: 2 slices
  • – Rice wine: 1 tablespoon
  • – Salt: 1 teaspoon
  • – Flour: 125 g
  • – Baking powder: 1/2 teaspoon
  • – Salt: 1 teaspoon
  • – Cooking oil: 1 tablespoon
  • – Water: 120 ml

2. Instructions:

– Cut each shrimp along inner curve, without cutting all the way through, about three-quarter way. Open up the shrimp flat up.

– Mix with marinade ingredients and keep aside for 20 minutes. Remove shrimps from marinade.

To prepare batter: Sift together the flour, baking powder and salt. Add oil and water. Beat till smooth.

– Heat oil for deep frying. Dip shrimps in batter, leaving tails uncoated and drop into hot oil. Cook over medium heat, 2 minutes till golden brown. Drain and dish up.

– Mix together the five-spice salt ingredients and dish up.
