1. Ingredients:
For bread dough:
– Soft butter: 30g
– Sugar: 2tbsp
– 1 egg has been blended: 2tbsp
– Bread flour: 280g
– Active yeast: 1tsp
– Salt:1/2 tsp
– Starch milk: 10g
– Warm milk: 170-200m.
For cookies dough:
Egg has been blened: remain part
Sugar: 75g
Cold butter: 60g
Baking powder: ½ tsp
2. Instructions:
Cookies dough:
– To sieve bread flour + baking flour
– To beat butter + sugar with an electric mixer until the mixture is finely smooth as cream.
– To divide egg into two parts. Stirring part 1 with butter until they are blended together, add part
– To put starch into mixture of butter and egg, mixing well by hand. Forming into dough ball and cover it by food wrap. Place it into refrigerator.
Bread dough:
– To dissolve sugar in warm milk, add active yeast and stir well. Let’s stand for 10 minutes to yeast float on the surface.
– To mix well starch with salt, make a hole at the centre.
– To put mixture of milk + active yeast into that hole and knead
– To knead the mixture for about 15 minutes, add more butter and continue knead more 15-20 minutes. Beating starch mixture several times for smooth.
– To film cooking oil in a large bowl, put starch mixture into this bowl and put the bowl in a warm place until it is double in size (about 1 hour or more).
– To divide the mixture into 10 parts (about 40-43g/part), let’s rest for 10 minutes. Making them into buns form (*).
– For cookies dough: let’s divide the dough ball into 10 parts, get part by part (remain parts are kept I refrigerator) to roll dough into thin layer and wrap the starch mixture (*). Using bench scraper to make a checked patterns on bread. Sprinkling sugar on the surface.
– To place break in baking tray, let’s rest 15 minutes before put the baking tray into oven. Set up at 1700c for 20 minutes.
