How to make cool spring rolls (Southern dish)

1. Ingredients:

  • Pork side (half fat and half lean): 0,5kg
  • Fresh shrimp: 0.5kg
  • Rice vermicelli: 0,5kg
  • Liquid lard: 100g
  • Peanuts: 200g

  • Beansprouts, fresh herbs, salad greens, field garlic, sugar, rice paper, dried shallot.

Wash pork and boil until done then cut into slices. Wash the shrimp and boil until done, shell and cleave in two. Wash beansprouts, salad greens, fresh herbs and field garlic. Soak in slightly saline water then drain. Cut the field garlic into 10cm pieces.

Place everything on a rice paper, fold in one side and roll up into a roll 7cm long then put the folls onto a plat plate.

Served this dish cool and with peanut dipping sauce.
