4. Ingredients:
– Fresh crab claws, cracked and cleaned: 10 to 12
– Fresh or canned crab meat (about 1 cup): 150 g
– Garlic, minced: 6 cloves
– Crushed coriander roots and stems: 2 teaspoons
– Oyster sauce: 2 teaspoons
– Fish sauce: 2 teaspoons
– White pepper: 1/2 teaspoons
– Egg yolks: 2
– Breadcrumbs: 40 g
– Oil for deep frying: 2 teaspoons
– Limes, cut into wedges, to serve Thai or Chinese plum sauce, for dipping: 1 to 2
5. Instructions:
Step 1: Crack the claws and carefully remove the meat reserving the claws and shells.
Step 2: Mix the crab meat, garlic, coriander roots, oyster sauce, fish sauce and pepper thoroughly.
Step 3: Add enough egg yolks to bind the mixture.
Step 4: Grease your hands with oil and shape the crab meat mixture around the claws.
Step 5: Roll the claws in the breadcrumbs to coat.
Step 6: Heat the oil in a wok to medium hot. Gently lower the claws into the oil and cook until golden brown, about 7 minutes each.
Step 7: Remove and drain on paper towels.
Step 8: Serve with plum sauce and limes.
