– Water: 2 liter

Method 1:
Longans have peeled; remove the pit, leaving pulp as intact as possible.
Soak lotus seeds and remove the shell, outer membrane and the bitter-tasting germ. Boil lotus seeds in water until soft then let cool and put each lotus seed inside each pulp.
Boil and filter sugar and add 10 longans (with lotus seeds as the pit) in a bowl; pour in sugar syrup; serve with ice.
Method 2:
Mix 100g of kudzu powder with abowl of water and slowly pour into the pot of sugar syrup; cook until powder becomes translucent; ladle into bowls and add longans with lotus seeds as the pit. Lotus seed liquor can also be mixed with sugar to make syrup.
