With about 70 minutes for preparing and cooking we will finish the delicious sweet taro soup for 4 people. Following the recipes below to make this sweet soup:
1. Ingredients:
– Small taro: 500 g
– Sticky rice: 200 g
– Coconut milk: 1 cup
– Sugar: 300 g
– Tapioca starch: 1 tablespoon
– Pineapple leaves (washed and cut into 10 cm lengths)
– Water, salt
2. Instructions
Peel and cut into 1.5 x 1.5 cm cubes of taro. Soak in salt water for about 5 minutes. Take taros out and drain them. Put taros in a steamer and steam for about 25 minutes until cooked.
Sticky rice has washed and added into a pot with 1.5 liters of water and pineapple leaves. Cook over high heat until boiling. Then, cook over low heat for about 40 minutes. Take pineapple leaves out.
Add 1/2 cup of coconut milk to the pot with rice then add 200 g sugar into.
Add taros to the pot with rice. Continue cooking over low heat for about 10 minutes. Season with a little salt and sugar for a pleasant taste. Sometimes stir for the sweet soup not to adhere to the pot bottom. Boil the soup then remove from heat.
Mix coconut milk left with 1/4 cup of water, 2 tablespoons of sugar and a little salt. Boil and add tapioca starch mixed with water to thicken then remove from heat.
Sprinkled with coconut milk over and serve sweet taro soup hot (or cold) in a bowl.
