1. Ingredients:
– Fresh crab: 500gr
– Stewed born juice
– Tamarind: 1
– Tomato: 2
– Ginger, garlic, lolot pepper, seasoning powder, soup starch, soy sauce, chili sauce.
2. Instructions:
Using small brush to remove soil and sand and then wash, drain. Separating body and shell of crab, remove bib, using scissors to cut out valances around crab’s body, peel away foam layer inside. To broke crab into two parts and marinate them with a little of seasoning powder, soup starch for about 1 hour to crab absorb spices.
To wash tomato, cut them into pieces like areca segments. Shave skin of ginger, wash, crush. Remove cover of garlic, chop up.
To fry garlic in a pot, add ½ amount of tomato into pot and fry until soft, using spoon puree, remove shell of tomato. Continue to fry crab, ginger and tamarind until the crabs turn red, then add stewed born juice, boil
To boil crab for 5 minutes, add piper lolot and keep stirring, add more spice and turn off stove.
To fish tamarind out of pot and take them into a bowl, using spoon puree and extract tamarind juice through a sieve. Pouring tamarind juice back to pot, stir, add a little of chili sauce.
To ladle soup into bowl and served hot with rice.
