1. Ingredients
– Scallops (are cleaned): 12
– Dried shrimps: 100g (or 20 defrosted frozen shrimps)
– Small pieces of black wood fungus
– Sweet potato, fish sauce, vegetable oil
2. Instructions:
Scallops are cleaned, dried shrimps are soaked in water for soften then drained and finely chopped. Soak fungus in warm water for soften, drain and chop. Sweet potato is boiled and mashed.
To make the shrimp paste stuffing: mix dried shrimps, fungus, potato, fish sause together.
Steam the scallops about 5 minutes for cooked then take out and leave to cool.
Slit the scallops in their thickest part and use spoon for stuff then fry in hot oil about 2 minutes.
