How to cook Vietnamese fried clams?

The following recipe guides you how to cook fried clams.

1. Ingredients:

  • 1kg of big clams
  • 100gr of fried peanut
  • 100gr of scallion
  • Garlic clove, red pepper, sugar, glutamate, fish sauce.

2. Instructions:

– Take out the cover of the fried peanuts then smash them.

– Clean shallot and chop the green part.

Heat the pan with 3 spoons of oil, when the oil boils, drop the chopped shallot in then remove the pan.

The way to make fish sauce: Smash 5 garlic cloves + 1 red pepper. Add in 1 spoon of sugar + ½ teaspoon of glutamate + 1 spoon of fish sauce + 4 spoons of water + 1 spoon of lemon juice, stir well. Taste to your taste.

When serving, place the stove with charcoal on the table than put the clams on the grill. When the shell clams are just open, draw the oil with shallot in each clam to make it boil, sprinkle the smashed peanut and fish sauce, serve hot.
